The No Grain Bread

There are a lot of people struggling with digestive and gut issues. I am not going to make any universal accusations here, but personally I have found that my system can not handle grains and sugar. It is rather sad, as I was brough up with bread! The Finnish breads are delicious and diverse, and I have always been a bit of a bread and butter addict. Well, no longer - I have to try and get myself sorted and unfortunately that means saying forlorn farewell to most baked goods.

The implications and benefits of moving to grain free eating are widely discussed over the internet and in the scientific forums. It is not the purpose of this blog post to explore those. You can find lots of helpful and unbiased information at www.mercola.com among other sites.

As I have mentioned before, I advocate no diets. I urge you to read up and research the topic and make up your own mind. Creating your own eating plan is much more satisfying than subscribing to someone elses ideas. Also learning about food and nutrition will diversify your cooking and eating to whole new levels.

Without further delay, Todays Recipe Corner treat is the "No Grain Bread". It is actually no grain, no dairy, no sugar, no yeast, no additives, no e-numbers, no preservatives - bread. It really only contains nuts, seeds, eggs, herbs and oil (if you want).This bread will give you a massive boost of healthy fats, protein, and minerals and very little carbohydrates. It can be eaten plain as it is or with any spread of your choise on top. I personally like a good dollop of Coconut oil to give that extra bit of flavour and goodness. This bread will keep for up to a week in the fridge in a sealed container, but it also freezes very well in case you are slow to go through it.

No Grain Bread Recipe:

Ingredients to make one loafNo Grain Bread

1 Cup Almond flour

1/2 Cup Coconut Flour

3/4 Cup Arrow Root Powder

1/4 Cup Groud Flax Seed

1/2 Teaspoon Sea Salt

1/2 Teaspoon Baking Soda

4 Large Eggs

1/4 Cup of Walnuts

1/4 Cup of Hazelnuts

1/2 Cup of Pistachios

1/4 Cup of Pumpkin Seed

1/4 Cup Hemp Seed

1/4 Cup of Sesame Seed

Method:

1. Mix the Dry ingredients in a bowl.

2. Mix Nuts and Seeds in another Bowl

3. Beat the eggs until a bit bubbly

4. Mix the Dry ingredients to the egg

5. Mix the Nuts and seeds to the batter - stir thoroughly

6. Pour mixture into a baking tin lined with baking paper

7. Bake at 180 degrees C for 30-35 minutes.

Preparation time approximately 15 minutes, baking time 30 minutes.

Optional Extras:

2 Table Spoons of Coconut Oil

1-2 Table Spoons of Raw Cacao Powder

1-2 Table Spoons of Dessicated (Unsweetened) Coconut

Any Spices or Herbs to taste to add a bit seasonal flovour

The above basic recipe will produce a wonderfully flavourfull loaf of extremely filling bread. You can jazz up the recipe with herbs and spices to suit your taste, or you can make more of a sweet version with by adding dessicated coconut and using Stevia powder as a sweetener. It is a very diverse recipe and can be altered in many different ways. Enjoy!
