Chia Pudding

This ancient nutritious seed is making its comeback in a grand fashion. Most health food bloggers are singing its praises and most health food shops and some super markets even stock it. The nutritional profile again is heavily weighted towards protein, fats and minerals, and they contain zero coarbohydrates. Chia seeds are a natural flavour enhancer, thus anything you add them to will taste delicious. They are very filling and contain a good helping of fibre to help out with the digestion and bowel transit.The health benefits are diverse and beyond the scope of this blog post, but you can easily find it on the internet.

The easiest, and in my opinion, the most delicious way of adding Chia seeds into your eating plan is by Chia Pudding. Personally I have Chia pudding as a part of my breakfast but it is equally good as an afternoon snack. Because of the great nutritional punch it can also be utilised as a post workout snack.

Simple Chia Pudding Recipe 

chia puddingIngredients

- A tin of Coconut Milk or Coconut Cream (not the watery version from a carton)

- 5 Table spoons on Chia Seeds (or more if you like)

Optionally you can also add some berries or chopped fruit to add flavour.

Method:

1. Stir the Coconut milk into a runny, even consistency in a bowl.

2. Stir in the chia seeds (add the berries or fruit pieces last)

3. Pour into serving containers - cups or glasses

4. Leave in the fridge to set for at least 30 minutes before eating (it can be rpepared in the evening if you are in a rush in the morning)

5. Enjoy!
